Whisk egg whites until fluffy (about 3 mins). Add honey, salt, and vanilla; combine with a whisk. Gently heat bloomed gelatine until dissolved, then add to the bowl. Whisk until the mixture is foamy and cloud-like. Pour into a ceramic/glass dish. Set in the fridge for at least 2 hours. Cut and enjoy on top of cacao for a delightful treat.
