Directions
                    
- In a small pot, heat the coconut milk gently, with lime zest and vanilla. Do not boil. 
- n separate bowl, bloom 2 tbs gelatine in 1/4 cup cold water. Let sit for 5 minutes. 
- Stir the bloomed gelatine into warm coconut milk until fully dissolved. 
- Add raw honey, lime juice and salt. Stir until smooth. 
- Pour into glasses. Chill in fridges for 4+ hours until set. 
- Serve with a lime wedges, coconut flakes or summer berries.
