Fluffy Blueberry Lemon Marshmallows

Ingredients

3 tbsp Ossa Organic Gelatine
1 cup fresh blueberries blended into purée
2 tbsp. fresh lemon juice
½ cup Ossa Organic honey
½ cup water
1 tsp. lemon zest
Extra freeze-dried blueberries (crushed for coating)

Directions

In a bowl, sprinkle Ossa Gelatine over ¼ cup water. Let bloom for 5 minutes
In a saucepan, heat blueberry purée, honey, lemon juice and ¼ cup water over medium heat until it reaches the soft-ball stage
Slowly pour the hot mixture into the bloomed gelatine while whisking with a hand mixer
Beat for 8-10 minutes until thick, fluffy and a beautiful deep purple. Add lemon zest in the last minute.
Pour into a lined pan, smooth the top and let set for 4-6 hours
Cut into squares, roll in crushed freeze-dried blueberries and enjoy!
