Strawberry Collagen Marshmallow

A fluffy, feel-good treat made with Ossa's raw wild honey, grass-fed gelatine and collagen, and real freeze-dried strawberries. These naturally sweet marshmallows are as nourishing as they are delicious — no refined sugar, just real food goodness.

In a large mixing bowl, pour 140ml of cold filtered water.
Sprinkle in the gelatine and collagen evenly.
In a saucepan, combine 350g raw wild honey and 100g filtered water.
Place over medium heat and stir to combine.
Bring to a gentle boil until it reaches a soft-ball stage (around 115°C / 240°F). Remove from heat immediately.
Begin mixing the bloomed gelatine on low speed using a stand mixer or hand mixer.
Carefully pour in the hot honey syrup in a thin stream while mixing.
Increase the speed to high and whip for 8–10 minutes until the mixture triples in volume and forms soft peaks.
Add vanilla extract and powdered freeze-dried strawberries. Whip for another 30 seconds to combine evenly.
Pour the fluffy mixture into a lined or greased square baking tin.
Smooth the top with a spatula.
Let it sit at room temperature for at least 4–6 hours (or overnight) until fully set.
Once set, remove from the tin.
Cut into cubes using a greased or hot knife.
Store in an airtight container for up to 1 week.
