An Ossa recipe - Thai Coconut Fish Stew
We absolutely love this recipe and as long as you have fresh ingredients, it is a one pot wonder. We recently served it to 8 of our friends over the long weekend for dinner and it was a total hit!
1 pouch of Ossa The Bone Broth Fish
3 organic garlic cloves
3 organic shallots
1 table spoon organic coconut oil
1 can organic coconut milk
1/2 can of organic coconut cream
2 table spoons rice vinegar
2 lemon grass stalks, finely chopped
2-4 finely chopped Thai chillies (depending on desire for fire!)
1 tablespoon fish sauce
Two organic limes. Finely grated zest from one of those limes
Handful of chopped fresh cilantro
Handful of chopped fresh Thai sweet basil
3/4 pound of seafood, such as cod or monkfish (diced into chunks), squid, mussels
Cooked rice, for serving
Heat the coconut oil in a pot over medium heat. Add the shallots and garlic and gentle soften for 3-5 minutes. Pour and stir in the Ossa Fish Bone Broth, coconut milk and cream, lemongrass, chillies, vinegar, fish sauce, salt and lime zest and simmer for 10 minutes.
Stir in the seafood and herbs and cook for 2-3 minutes. Stir in the lime juice just before serving. Serve with rice.
