Teaming up with @oatsinmybowl, we've crafted a pancake recipe that's not only irresistibly fluffy but also incorporates wholesome ingredients to kickstart your day.

Ingredients:  

  • 1/2 cup self-rising flour
  • 1/2 cup oat flour
  • 2 tbsp honey
  • 1 egg
  • 3/4 cup milk
  • 2 tbsp @ossaorganic ghee
  • 1 tsp Vanilla extract (optional)


2-Ingredient Cherry Compote:

  • Handful of frozen cherries
  • 1 tbsp honey

Method

 
  1. In a large bowl, combine the self-rising flour, oat flour, egg, and milk. Mix until the batter is smooth and free of lumps.
  2. Melt 2 tbsp of @ossaorganic ghee and add it to the pancake mixture along with the honey.
  3. For the cherry compote: Microwave the cherries and honey for 2 minutes, then let it sit until cooled down.
  4. Cook the pancake batter on a frying pan or crepe pan over medium heat, adding a bit more ghee. Cook until lightly golden on both sides.
  5. Enjoy your pancakes warm, topped with the two-ingredient cherry compote and an extra drizzle of melted ghee!
